An ever-evolving menu
Here, cuisine is lived as much as tasted. Seated in front of the ocean, guests discover a short menu that evolves according to arrival and season, faithful to the inspiration of the day and the products available. Service takes place on the outdoor terrace, which opens onto landscaped gardens. Light, sea air and hushed voices all contribute to an atmosphere as fluid as it is natural. Nothing is static, everything is alive, just like the island itself.

Bistronomic Restaurant
In the gastronomic bistro setting of the Hautes Mers, the Chef presents a 7-course tasting menu, conceived as an oceanic journey. Lobster, langoustine, and blanc-manger follow in a refined composition, where each dish reveals perfectly cooked flavors and the freshness of the ingredients.

The Ocean Fire
On the terrace
The Brasero brings guests together to enjoy flame-grilled cuisine. Whole fish, grilled vegetables, shellfish to share... The flame creates a warm, open meal, in direct contact with the island. A simple, generous proposal to end the week on a high note.

Every summer Wednesday, the gardens are transformed into a summer stage. Live acoustic music, plates to share, glasses in hand... The atmosphere is relaxed but well-cared-for, conducive to conversation.

At Hautes Mers, the day begins with generosity. Presented as a buffet, breakfast is now open to all: guests and visitors alike. Golden Viennese pastries, fresh fruit, island specialities and hot drinks are served in a unique setting.

Prepared by La Cuisine des Hautes Mers, the picnic basket is available as an aperitif or a full meal, to take wherever you like on the island. Packaged in a rattan basket, it invites you to choose your favorite beach or cove to enjoy an open-air lunch.

Every afternoon at 4 PM, enjoy the signature homemade snack created by Chef Lou Marquis. Prepared according to the day's inspiration, it offers a gourmet and comforting break, ideal after a stroll on the island or a moment of relaxation at the Spa.

Vent Debout is privatized for your events, in a confidential setting facing the Atlantic. Intimate weddings, team lunches, birthday dinners, or custom receptions: each project is carefully managed by Chef Lou Marquis and the teams. An elegant yet relaxed atmosphere, cuisine inspired by the location... everything is brought together to create unique and memorable moments.
